Our Spaghetti Quadrati, also known as “alla chitarra,” have a special history that began in Abruzzo and spread throughout Southern Italy.
Their name comes from an old instrument, like a guitar, used to cut them. Its thin metal strings transform the pasta sheet into spaghetti with a characteristic square shape.
Thanks to this process, the pasta’s surface becomes rough and porous, perfect for “catching” sauces and binding well with condiments.
They are ideal for meat sauces, fish sauces, or rich sauces, which completely coat them, making every bite a unique pleasure.
